DOUBLE CHOC MUG CAKE FOR VALENTINES
Rather than head out and pay crazy amounts of money to sit in a over-packed restaurant, just so the strangers next to us can hear our every word; we are staying in for Valentines Day which actually I prefer. Therefore; I have been looking around at ways to make a really quick desert so that I can spend more time making a superb starter and main, sup a rather large glass of wine and enjoy Sax’s company.
So the hype of the microwaveable mug cake has most probably past, but since Valentines is just around the corner, and I am desperate to find an easy sweet, I thought I would give it a go.
I did try the normal method of making the cake mix using eggs, milk, flour, cocoa powder and butter etc. but I found that the cake came out too dry; and since the reason for this is to save time, I decided to buy the refrigerated ready-made cake mix. Tut tut, I’m cheating I know…. but seriously it was delicious and sooo easy.
I’m crazy about chocolate, I wish that it wasn’t my weakness but it is! Even when I’m trying to be super healthy, and calorie counting which is what I am doing at the moment, I always find a way to fit it in there somewhere. So obviously I bought a super moist chocolate cake mix; and to add a little extra moist, I randomly added a couple of pieces of white choc. A hazelnut chocolate spread or milk chocolate will equally work. If you prefer dark, go for it; it will add a slight bitter taste but still delicious.
Before adding the cake mix I used a little butter to line the inside of the mug, so that the cake doesn’t stick should you prefer to remove it from the mug. (Please make sure that the mug you are using is microwaveable!) Don’t fill the mug more that half way, otherwise it will overspill. 2 minutes in the microwave, and you are ready to enjoy!
So there you are, super easy, super delicious and a fabulous warm chocolate cake in a mug!
